Healthy and budget friendly dinners

This week I’m continuing the grocery budget challenge I set myself. In this video and blog post I’m sharing some simple, healthy and budget friendly dinner recipes. As an extra bonus, they are also gluten free! If you missed the lunch and snack recipes, check out my last post.

Tuna Pasta Bake

I normally just buy the tuna pasta bake sauce and follow the recipe on the jar. For the recipe version I make in this video I used:

  • 1 large can of tuna in spring water
  • 1 medium can of pineapple
  • large bag of gluten free pasta (any kind of pasta is fine!)
  • a handful of fresh spinach
  • tuna pasta bake sauce
  • grated cheese to your preference

Boil and drain your pasta, pour into oven safe dish. Drain tuna and mix in with the pasta. Slice up your spinach and pineapple, mix in with the tuna and pasta. Pour over tuna pasta bake sauce and mix well (rinse the jar out with some water or milk and add to your dish to get every last little drop out). Top with cheese. Bake in the oven for 20-25 minutes, about 200 degrees C.

Chickpea Sweet Potato Chilli

This recipe is from Sweet Peas and Saffron, I normally use about half the amount of chili to what the recipe calls for as it is pretty spicy. That way we can add more chili after instead if needed. I also often substitute the lime juice for lemon juice, depending what I have in the house.

I’ve made this in a slow cooker and in a pressure cooker in the past, but I’m sure you could make it on the stove as well, you’d just need to experiment with the cooking time.

Taco Casserole

I believe I first found this recipe through the Simplified Saver on YouTube.

  • 1 lb of ground beef/turkey
  • 1 taco seasoning packet
  • 1/2 onion
  • 1 can of corn
  • 1 can of rotel/diced tomatoes
  • 1 can of black beans
  • 2 cups of rice
  • 2 cups of sharp shredded cheese

Cook your ground meat and add in taco seasoning. Drain the grease and add into the dish. Mix in drained corn, black beans, chopped onion and rotel/diced tomatoes. Boil and cook 2 cups of rice and add into dish as well. Give it a really good stir and top with cheese. Bake in oven at 400 degrees F (200 degrees C) for 20 minutes.
