Budget friendly lunch and snacks

In this weeks video I share some of my favourite gluten free budget lunch and snack recipes. I am a firm believer that making budget friendly meals can be both tasty and very healthy.

The recipes I cooked:

  • Home made hummus: recipe from this blog.
  • Zucchini bake: recipe from this blog.

Chickpea Salad Recipe:

  • 1 can chickpeas
  • 1 can corn
  • salad/lettuce of your choice
  • 1 carrot
  • 2 tbsp greek yoghurt or 1-2 tbsp olive oil
  • 1 tbsp lemon juice
  • salt and pepper
  • 1 tsp mustard (optional)

Instructions:

  1. Drain the chickpeas and mash them up with a fork.
  2. Mix in your yoghurt or olive oil + lemon juice + salt and pepper + mustard (optional)
  3. Drain the corn and add to bowl
  4. Add the lettuce and carrot
  5. Top with anything else you like, I sometimes add a boiled egg, some tuna or chicken, grated cheese or avocado.

This recipe lasts about 2 days stored in an airtight container in the fridge.
