This recipe is one of my own creations and it’s affectionately known as ‘Emmy Eggs‘ in our family. It uses super simple ingredients (eggs, cheese, ham), can be served on toast or with a salad and takes about 5 minutes to throw together!
Ingredients for Emmy Eggs (4 serves):
- 4 eggs (I use free range eggs)
- 4 slices of ham (any kind of ham works, but sliced turkey, chicken or bacon would probably work as well)
- 4 slices of cheese (I normally use cheddar or tasty cheese)
- Salt & pepper
- Olive oil
- Avocado (optional, but delicious)
- Bread/toast to serve
Instructions:
- Add 1 tbsp olive oil to medium heat pan on stove.
- Crack 4 eggs in fry pan, add salt + pepper and fry until egg yolk is your preferred texture (I like it slightly runny)
- Add 1 slice of ham on top of each egg.
- Flip each egg over (ham side ends up down)
- Add cheese slice on top of each egg (I normally pop the lid on to help it melt faster)
- Fry on ham side for 1-2 minutes until eggs are cooked and cheese is melted
- Serve on toast, with a side of avocado or with a salad.
I love this recipe, because so simple, versatile and filling. These eggs make great sandwiches for roadtrips and hikes too!
