Regardless if you call this dish Potato bake, Potato Gratin, Scalloped Potatoes or Potatoes Au Gratin, this recipe is easy to make and very comforting.
Potato gratin ingredients:
Makes 6 serves
- 1 tbsp olive oil or butter
- 1 small leek or medium brown onion
- 1-2 cloves minced garlic (or 1 tsp garlic powder)
- 6-8 medium potatoes
- 300 ml thickened cream (or make a white roux/sauce with butter, flour and milk)
- 1-2 tsp wholegrain mustard (dijon also works)
- 1 tsp dill
- Salt and pepper
- Optional extra: 1 cup cheese (I typically use tasty or cheddar)
Cooking instructions:
- Bring 1 large pot of water to a boil with a pinch of salt.
- Wash potatoes and add to the pot (you can peel potatoes if you prefer, but you don’t have to. I typically cut potatoes in half to reduce cook time).
- Boil until almost done (fork tender, but not crumbling or falling apart).
- Drain potatoes and pop on your cutting board.
- Preheat oven to 200C (180 fan forced) and prepare an oven dish (approx 30 x 20 cm) with some non stick spray/oil.
- Use a fork and a sharp knife to cut potato into fairly thin slices. Layer potato in the oven dish.
- Slice onion/leek in thin slices.
- Add butter/oil to a fry pan and cook onion/leek on medium heat until soft and translucent.
- Stir together cream (or roux), mustard, salt, pepper, dill and onion/leek.
- Pour over the potatoes and spread evenly.
- Optional extra: add 1 cup of cheese on top
- Bake in oven for about 20 minutes until potatoes are bubbly and cheese has browned slightly.
Enjoy with your favourite protein.
