When I first started baking my own bread, I found it a bit daunting, so the very first bread recipe I tried (and succeeded with) was this one. Whilst I really love how simple that crusty bread is, I was keen to level up a bit with something a bit more nutritious and more of a sandwich bread. I have now modified the original base recipe (can’t remember where I originally found it) over the past year to a version I really love and want to share with you all!
Easy homemade bread with oats
Ingredients:
- 1.25 cups (300ml) of lukewarm water
- 1/8 cup (25 g) brown sugar
- 1/8 cup (30 g) melted butter
- 1/2 cup oats
- 1/2 tablespoon salt
- 1/2 tablespoon dry yeast
- 2.5 cups flour (Plain/all purpose flour works well. I often use 1.5 cups plain + 1 cup wholemeal flour)
Instructions:
- Mix all dry ingredients
- Add butter and slowly add water as you incorporate all ingredients (If not using a stand mixer, I usually start with a spatula/wooden spoon and then move to using my hands)
- Knead for 5-10 mins (a stand mixer is super helpful to use here, but not necessary)
- Allow dough to rise in bowl (ideally in a warm spot) for 2 h.
- Grease a loaf pan lightly (I usually use avocado oil or light flavoured olive oil)
- Move dough to loaf pan and allow to rise another 2 h
- Bake at 175 C for 35 mins or until golden brown
- Allow to cool completely on a baking rack before slicing
This bread freezes really well, I normally just slice it first and then defrost/toast as I need to use it. Also super easy to double (or triple this recipe) to make more bread in one go and freeze if needed.
