Let’s meal prep 10 lunches in just over half an hour! Meal prepping lunches is a key part of my week to stay healthy and on budget. Not to mention the time it saves during the week to have healthy food to grab as you head off to work. This weeks lunch meal prep is gluten free, super easy and only took me about 30 minutes all up!
Simple meal prep salad dressing:
Combine the ingredients in a glass jar and shake them well to mix. Store in fridge for 3-4 days (shake each time before you serve).
- equal amount of lemon juice and olive oil (white vinegar or balsamic works too if you don’t like/have lemon juice)
- 1 tsp of mustard (I prefer dijon)
- salt & pepper
- 1 tsp of honey (optional, but it adds lovely sweetness!)
