This gluten-free coconut cake is a favourite dessert of ours and it’s super easy to make (only 4 ingredients)! I got this recipe from my mother-in-law who in turn got it from a friend of hers, and I have not been able to find the original recipe online, so I thought I’d share it here in case you want to try it.
Gluten-free coconut cake ingredients:
Makes 6 serves
- 4 eggs
- 3 tbsp butter (melted)
- 1 can condensed milk
- 1,5 cup coconut flakes/shredded coconut
Yep, it’s only 4 ingredients!
Instructions:
- Preheat oven to 180C (fan forced)
- Melt butter (I normally just do this in the microwave in short 30 sec bursts, just watch it closely)
- Whisk 4 eggs and melted butter in a bowl
- Add the can of condensed milk and the coconut flakes to the bowl. Stir together until combined.
- Add to a baking dish of your choice and bake for about 30 mins.
- Let cool slightly and serve with berries and your choice of ice cream, natural yoghurt or whipped cream.
