Meal prep sure helps save a lot of time, and there is no reason we should not enjoy a sweet treat from time to time as well! This week I’m sharing one of my favourite stews/casseroles along with a chocolate cake that’s fool proof.
Budget dinner recipe | Beef and veggie stew:
You can vary this recipe to use up any veggies and seasonings you like, but the below is the base I often use.
- 1 brown onion
- 2-3 cloves of garlic (or 2 tsp minced garlic)
- 2 x 400g cans of diced tomatoes
- 2 cups of broth (or use 2 stock cubes and 2 cups of water)
- 500 grams mince (beef or pork)
- 4-6 potatoes
- 2-3 carrots
- bay leaf
- salt & pepper
- Chilli powder (optional)
In a large pot, add 2 tbsp olive oil. Cook brown onion for a few minutes (until soft). Add garlic for 1-2 mins and then add mince and brown fully. Add diced tomatoes plus your broth. Then add all your vegetables and seasonings and bring up to a simmer. Let simmer with lid on with temperature on medium/low for about 30-40 minutes until the vegetables are soft to your liking.
