If you’re looking for a super simple potato salad recipe (no mayonnaise), this recipe is for you! This recipe is a budget friendly crowd pleaser that you can easily vary up depending on your preferred seasonings!
Potato salad ingredients:
Serves 6-8 ppl as a side dish.
- 6-8 medium potatoes – most potato varieties will work, but look for ones that say to use in salads, as they tend to hold their shape without crumbling or getting too mushy
- 3-4 tbsp greek yoghurt or light sour cream – ensure to use non flavoured yoghurt
- 1-2 tsp mustard – I typically use dijon or wholegrain
- 5-6 burger pickles (or 2-3 sandwich stacker pickles)
- 1 small red onion (or 2 green onions)
- 1 tsp dried dill – you can also use fresh dill, it works well with the potatoes
- Salt and pepper to taste
Optional extra ingredients:
- 1 tbsp pickle juice
- Fresh chives
- 2-3 boiled eggs (peeled and cubed small) – this helps bulk it out a bit with more protein
How to make the potato salad
- Bring a medium sized pot of water with a pinch of salt to a boil.
- Wash and cube potatoes in small (bite sizes) pieces. I normally don’t peel the potatoes, as there are plenty of nutrients in the peel
- Add potatoes to the pot and boil until fork tender (about 15 mins)
- Drain potatoes and let them cool down
- Add potatoes to a big bowl
- Cut your onion in thin slices and cube your pickles in tiny cubes.
- If adding eggs – peel and cube them small
- Add all ingredients and seasonings to the bowl and gently stir together (to avoid breaking/mashing the potatoes)
- Adjust seasonings to taste.
- Serve as a side dish with chicken, salmon, sausages, steak or pretty much anything from a barbecue.
- Store in an airtight container in fridge for up to 3-4 days.
