I love meal planning, but sometimes it can be hard to think of good, budget friendly recipes to make. My partner is gluten free, so we also need to factor that into our plan and budget (because let’s face it – I’m way too lazy to cook separate meals for us!).
2 of my favourite gluten free lunch recipes
In the video below I share two of my recent favourites. They are fairly quick to prep and lasts really well in the fridge for a few days.
- Greek lentil soup: hearty and filling, but yet pretty light. Serve as it is or with some bread, super yummy and very budget friendly. You can find the base recipe here, but I often substitute things if I don’t have all the ingredients on hand.
- Quinoa black bean salad: I love salads, but I find they go bad very quickly so I wanted one without green leafy things that are meal prep friendly. This recipe (especially the dressing) is so easy to make and very budget friendly. You can top it with avocado, chicken or anything else you have on hand, or just leave as it is.
