This is my husbands recipe for chicken wings, which is a modification of a range of recipes over the past year. This chicken hot wings recipe is easy to double (or triple!) and it’s a great party food to cook up on your barbecue.
To make delicious hot wings on your Weber Q BBQ using Frank’s Hot Sauce (or any other hot sauce of your liking), follow this simple and flavorful recipe. This method ensures crispy wings with the perfect amount of heat and flavor.
Ingredients
– Chicken Wings: About 2.5 lbs (1.1 kg)
– Olive Oil: For coating
– Salt: To taste
– Black Pepper: To taste
– Baking Powder: 1 tablespoon (for extra crispiness)
– Chili Powder: 1 tablespoon
– Frank’s RedHot Sauce: 1/2 cup (you can substitute with other hot sauce of your choice)
– Unsalted Butter: 1/3 cup (melted)
Preparation Steps
1. Prepare the Wings:
– Pat the chicken wings dry with paper towels to remove excess moisture.
– In a large bowl, mix the baking powder, chili powder, salt, and black pepper.
– Toss the wings in the mixture until they are evenly coated.
2. Refrigerate:
– For optimal crispiness, place the seasoned wings on a rack and refrigerate uncovered for at least 10 hours or overnight. If you’re short on time, you can skip this step, but it’s recommended for better texture.
Cooking Instructions
1. Preheat the Grill:
– Preheat your Weber Q BBQ for about 10-12 minutes with the lid closed. Aim for a temperature of around 200°C (about 400°F).
2. Indirect Grilling:
– Set up your grill for indirect cooking. Place the wings on the cooler side of the grill (not directly over the flames) and cook them skin-side up for approximately 30 minutes, or until they start to brown and crisp up.
3. Prepare the Sauce:
– While the wings are grilling, melt the butter in a small saucepan over low heat. You can also melt butter in microwave in 30 sec increments. Make sure to monitor closely, so it does not splash butter all over your microwave. Once melted, remove from heat and stir in the Frank’s RedHot Sauce.
4. Coat and Finish Cooking:
– After 30 minutes, remove the wings from the grill in small batches (5-10 wings at a time) and toss them in the prepared hot sauce mixture until well coated.
– Return the sauced wings to the grill, this time placing them skin-side down over direct heat. Grill for another 2-3 minutes per side until they are nicely charred and crispy.
5. Serve:
– Remove from the grill and serve immediately with celery sticks, carrot sticks, and blue cheese dressing for dipping.
