This taco casserole is super budget friendly and versatile to add whatever ingredients you prefer.
Taco casserole ingredients:
Makes 6 generous servings
- 500g of ground beef/turkey
- 1 taco seasoning packet (or you can make your own)
- 1 onion
- 1 can of corn
- 1-2 cans of diced tomatoes
- 1 can of black beans or chickpeas
- 1-2 cups of white rice
- 1-2 cups of sharp shredded cheese
- Red pepper flakes or jalapeƱos (optional)
How to make the taco casserole:
- Set oven to 200 degrees C
- In a frying pan – cook your ground meat and onion and add in taco seasoning. Drain excess grease and add into an oven safe baking dish.
- Cook 1-2 cups of rice and add into dish as well (I usually put the rice on the bottom and then add the other ingredients on top)
- Mix in drained corn, black beans/chickpeas and diced tomatoes.
- Give it a really good stir and top with cheese.
- Cook at 200 degrees for 20-25 minutes (until cheese is bubbly and melted)
- Serve with salsa, sour cream or avocado
Store in airtight container in the fridge for up to 3 days. This reheats very well, so I often do this for meal prep.
