In this weeks video I share some of my favourite gluten free budget lunch and snack recipes. I am a firm believer that making budget friendly meals can be both tasty and very healthy.
The recipes I cooked:
Chickpea Salad Recipe:
- 1 can chickpeas
- 1 can corn
- salad/lettuce of your choice
- 1 carrot
- 2 tbsp greek yoghurt or 1-2 tbsp olive oil
- 1 tbsp lemon juice
- salt and pepper
- 1 tsp mustard (optional)
Instructions:
- Drain the chickpeas and mash them up with a fork.
- Mix in your yoghurt or olive oil + lemon juice + salt and pepper + mustard (optional)
- Drain the corn and add to bowl
- Add the lettuce and carrot
- Top with anything else you like, I sometimes add a boiled egg, some tuna or chicken, grated cheese or avocado.
This recipe lasts about 2 days stored in an airtight container in the fridge.
